At present, this is not possible unless you are using a Push Delivery Destination such as MySQL, Postgres, or BigQuery, which all allow you to provide a mapping file to specify the fields you want to receive.
Please bear in mind that all license fee costs are set by the data providers, so in the case of Twitter data; you would still be required to pay the full cost for receiving a Tweet, even if you only pull a small subset of the available data fields.
